If you don’t want to feel like a chubster on Sunday, try these dishes to help cut some calories but still has an amazing taste.
Swap your Seven Layer Dip(640 calorie for one cup) for an Amazing Eight Layer Dip which is only 150 calories for one cup!!
4 Cups of Shredded Iceberg Lettuce
2 1/2 Cups peeled and cubed butternut squash
2 Cups of Cherry Tomatoes, chopped
1 Cup diced onions
1 Cup canned black beans (heated)
4 Ounces of lean ground beef or soy crumbles
4 ounces of roasted red peppers (not packed in oil), chopped
1/2 cut of fat-free Sour Cream
1/4 cups of shredded cheddar cheese
3 1/2 tsp taco seasoning (dry mix)
Salt, Pepper and Lime Juice
Combine half of the tomatoes with all the onions. Season to taste with salt, pepper and lime juice, then set aside.
Next, microwave squash with 2 tablespoons of water for 6 minutes or until the squash is tender.
Using a fork or potato masher, mash squash to a pulp and mic in 1 1/2 teaspoons of the taco seasoning and set dish aside.
Combine meat with the remaining tomatoes and 2 teaspoons of taco seasoning in a heated pan. Cook until brown.
In a large dish, layer ingredients in this order: lettuce, butternut squash mixture, tomato/onion mix, sour cream, black beans, meat, shredded cheese and red peppers.
Chili Cheese Nachos
Who doesn’t love Nachos? Did you know a normal chili cheese nacho plate can net you 451 calorie per serving (1/4 cup). These nacho’s are 216 calories per serving!
One 7-ounce bag of baked tortilla chips
1 Cup low-fat Turkey or Veggie Chili
3/4 Cup Salsa
1/2 Cup Light Soymilk
3 Ounces fat-free block cheddar cheese
1 wedge The Laughing Cow Light Original Swiss Cheese
2 tablespoons fat-free cream cheese
2 tablespoons fat-free sour cream
Place all three cheeses with the soymilk and heat over low heat, stirring occasionally. Continue until all cheeses have melted and your cheese sauce is throughly mixed and hot.
Prepare chili according to package directions. Microwave chips in a bow until warm and then spread them out on a large platter.
Pour your cheese sauce over the chips, top with chili then spoon your sour cream and salsa on top!!
