Delicious and Healthy Tacos

My favorite food hands down is TACOS! It took a little bit of playing around but I was able to make my favorite treat with the clean eating in mind.

I start with slicing up half of a green pepper, red pepper and onion and let them simmer by themselves.

Then I let the beef (or whatever I am using) take a bath in some fresh pepper, peppercorn, garlic or whatever spice I’m in the mood to use. *Hint – Sprinkle a little bit of orange, lime or lemon juice on it and it will help the meat soak it in better.*

Then I fry up a corn tortilla using olive oil (that’s the fatty part ;-) and then voila…delicious and mostly healthy tacos!
